Vegan Dirty Rice

2 T Olive Oil

4 cloves garlic, chopped

1 cup chopped yellow or white onion

1 cup chopped celery

1 cup green & red bell peppers chopped & mixed

1 pkg extra firm tofu drained and pressed

1 16 oz can of red beans drained and rinsed

2.5 Cups of vegetable stock 

Zatarains Dirty Rice Mix

Chao vegan provolone cheeze slices.

Take out tofu and drain. Set on counter with 5-6 paper towels on bottom & 5-6 paper towels on top. Set heavy book or pan on top to press out additional liquid from tofu. While tofu is being pressed in large saucepan or pot heat olive oil. Add garlic, onions, celery, & bell pepper mix. Saute 6-8 minutes or until vegetables are slightly tender and onions are translucent. Add tofu and break apart until it resembles crumbled meat. Add red beans, vegetable stock & rice mix. Add in additional spices as needed. Once rice has fully absorbed liquid serve topped with Chao provolone cheeze slices.
